Origin & Type

You told us that you would like more choice on our menus so, in 2004, we introduced our salad options.We are as fussy about our salads as we are about all of our other ingredients. We use iceberg lettuce in most of our sandwiches, and our garden salads have a mixture of five crunchy, colourful varieties of lettuce leaves.  We closely monitor how the lettuce supplied to us is grown.That means we ask our suppliers to use as little pest control as possible and to exercise care in the use of fertiliser. In addition, our suppliers have committed to supplying all of our lettuce seeds from non-genetically modified sources.

Freshness

Because you love the taste of our crisp lettuce, we make sure it is as fresh as possible by the time it gets to you. Lettuce reaches maturity at around 55 days in summer and 110 days in winter. After harvesting, it is delivered to chilled units within three hours, where it’s kept between 1oC and 4oC.Then, our supplier washes it, first in water and then with just the right amount of natural fruit extract. This minimises the growth of bacteria and helps to keep the lettuce fresh. After another bath in cold water, it is ready to be processed.

We pride ourselves on the preparation of our food, and our salads are no exception.

And if you order a salad from our Salads Plus range, you can be sure that we only add in the other ingredients, such as tomatoes, croutons and cheese in the restaurant on the day you buy it.
